We’re after someone experienced in traditional Turkish charcoal grilling (ocakbaşı style), with strong skills in shish and kebabs.
Key Responsibilities
Prepare and cook a variety of traditional Turkish dishes, including shish, kebabs, and grilled meats over charcoal
Operate and manage an ocakbaşı (charcoal grill) with confidence and consistency
Work efficiently in a fast-paced environment while maintaining high food quality
Uphold strict food hygiene, health, and safety standards
Take responsibility for running the kitchen independently when required
Manage stock control, ordering, and minimise waste
Carry out general kitchen cleaning and maintenance
Ensure authentic flavour, presentation, and consistency in all dishes
Requirements
Essential:
Previous experience in Turkish cuisine or charcoal grill cooking
Ability to speak and read English
Reliable transport or ability to commute locally
Comfortable handling pork products
Ability to work independently and manage kitchen operations
Desirable Skills:
Experience working in an ocakbaşı-style restaurant
Knowledge of traditional Turkish marinades, spices, and preparation techniques
