About the role
Kyloe, one of Edinburgh’s leading gourmet steak restaurants, is seeking an experienced Grill Chef to take ownership of the grill section and deliver consistently excellent results in a busy, quality-led kitchen.
Kyloe is built on premium, sustainably sourced Scottish beef from leading suppliers. As Grill Chef, you will be responsible for cooking it to the highest standard, with precision, consistency and attention to detail across every service.
The ideal candidate will have grill experience in a quality steakhouse or comparable grill-led restaurant, at Chef de Partie level or senior Chef de Partie level. Experience in a Rosette-standard kitchen is highly desirable.
Key Responsibilities
- Run the grill section to a consistently high standard during every service
- Cook steaks accurately to the requested temperature, with correct seasoning and resting
- Prepare, trim and portion steak cuts to specification, and maintain thorough mise en place
- Manage the grill effectively, controlling heat and timing to maintain pace during high-volume services
- Work closely with the Head Chef, Sous Chef and the passe to ensure dishes are delivered together and on time
- Train and mentor junior chefs on the grill section
- Uphold allergen, food safety and Food Standards procedures, including temperature monitoring and record keeping
- Minimise waste and support cost control through the careful handling of premium produce
- Contribute to the kitchen's goal of achieving 2 AA Rosettes
Requirements
- Proven experience working a grill section in a quality-led steakhouse or similar restaurant
- Strong knowledge of steak cuts, their characteristics and the correct cooking method for each
- Confidence cooking to temperature, both by touch and by probe, across all degrees of doneness
- The ability to perform consistently under pressure, with pride in every plate served
- Excellent organisation and communication skills, leading the section by example
- A commitment to professional development and progression
